Double Chocolate Brownies

These lovely, chocolaty brownies are great for any occasion!

Cooking and baking are my favorite things. Baking especially is my favorite thing, so I’ve decided to show you a great recipe for chocolate brownies!

The ingredients required are:

150 g dark or milk chocolate, broken into pieces

1 cup softened butter, 2 cups all – purpose flour

½ cup caster (superfine) sugar

2 teaspoons baking powder

4 beaten eggs

25 grams chopped pistachio nuts (don’t worry, you can’t taste ‘em)

100 g roughly chopped white chocolate

And finally, icing sugar for dusting (optional).

You will also need a 9 x 9 inch baking pan.

Start by lightly greasing the baking pan and after doing so melt the chocolate and butter in a saucepan over a low fire. Stir this mix until completely mixed and leave to cool slightly. Then sieve (strain) the flour into a separate mixing bowl, stir in the caster (superfine) sugar, and add the baking powder. Afterwards, stir the eggs into the melted chocolate mixture, then pour this mix into the flour and sugar mix, beating well. Stir in the pistachio nuts and white chocolate, then pour it into the pan, spreading it evenly into the corners. Bake in a preheated oven, Gas Mark 4, for 30-35 minutes until firm to the touch. The brownie might not be completely firm in the middle when it’s removed from the oven, but it will set after you leave the brownie in the pan for 20 minutes.

Finish up by sprinkling the icing sugar over the brownie, or by setting chocolate chips on the brownie and cutting it into either 12 pieces or into as many pieces as you want. Another variation is cutting a piece, slicing it in half, applying cream in between slices, and setting chocolate chips on top. Either way, they’ll surely be delicious!

Kofte (Spicy Meatballs)

A spicy treat!

I love to cook, so when my granny made kofte I watched her and took notes.  Kofte are spicy chicken meatballs and come from Pakistan.The needed ingredients are: 2 onions, small green chili peppers, 2 packs of chicken mince, red pepper, salt, hot spice, white cumin seeds, ginger and garlic paste, and small pieces of brown bread. Kitchen tools: chopper, paper towel, filter, clean spoon, big bowl, and a cooking pan.

First, chop the onions and chili peppers into small pieces, and then put it in the chopper. Leave it there until you need to work with it. Second, drain the chicken mince and leave it for 5 minutes. Then dry it a little with the paper towel. Third, pop the chicken mince into the chopper. Turn it on. While it’s working, get all the spices and add them to the chopper. Then, add some ginger and garlic paste, and stir a little, then put the mixture in your big bowl. Don’t put all of it in!  Next, add some pieces of the bread to the remaining. Then, switch the chopper on. When done, add the new mix to the bowl. Mix it up.

Finally, put the cooking pan on the stove. Make balls from the mix and pop them in. Wait for it to cook. Then Voila! Your kofte are ready!
